Raw (bake-less) *Coco-Choc-Nut cake*

Ingredients & Recipe
  • Coconut butter
  • Pure Cocoa powder
  • Almonds (grind and make meal or buy almond meal)
  • Dates (pre-soaked in water for an hour)
  • Shredded coconut
  • Peanut butter
  • Dried cranberries
  • Dried diced apricots
    ​
* Mix together to form a thick consistency and place in tray,

* Place in freezer for 30 minutes, and then keep in the fridge until serving.


So it was 10:30am and my little new-born son was sleeping his morning nap. I had 2 hours to fabricate something delicious and 'amazing' to take to my in-laws for lunch as I had promised dessert. I didn't have any of the typical dessert staples in the pantry or fridge... i.e. no butter, no flour etc. So I raided the pantry. Literally. And got very, very lucky. I had nuts and dates and ALOT of inspiration, which resulted in a: 

Raw (bake-less) "Coco-Choc-Nut cake"

Since making it the first time I have made it again on two more occasions for several of my vegan friends. I will be perfecting the measurments each time (please bare with me!) but if you are feeling creative have a go!

It's super easy, quick and most importantly... Divinely Delicious!

To serve:

*  Decorate the cake by sprinkling:
  • Shredded coconut
  • Crushed Walnuts
  • Pumpkin seeds
  • Crushed Pistachios

*   Can be served alone or with freshly cut fruit.


[I once served it with sliced oranges and raspberries, and the citric flavours enhanced the rich tasting cake beautifully!]
